So we will learn about green coffee beans in this article to give you a better overview of this coffee variety.

1. What is Green Bean Coffee?

Green coffee is a fruit from green coffee beans.

And there’s another word for green coffee beans: coffee beans.

That’s right; green bean coffee is simply a product of regular, normal, raw coffee beans that haven’t been roasted yet. Coffee beans that have been picked and processed are green, and only take on their familiar brown color because of the roasting process.

2. How can you classify different types of green coffee beans (unroasted coffee)?

Classify green coffee by types of coffee

Delight in the two most popular types of coffee – Arabica coffee and Robusta coffee – both of which can be found in green coffee form. Arabica coffee, also known as tea coffee, is typically grown in places with an altitude of 1000m or more.

Many people love Arabica coffee because of its distinctive aroma, aftertaste, less bitterness, and rich flavor.

Unlike Arabica, robusta coffee is sunny, suitable for a tropically hot and humid climate, grown in low mountainous areas, has good disease resistance, and is high in caffeine. In addition to Arabica and Robusta, Vietnam is also famous for Excelsa coffee (Jackfruit coffee) and Culi coffee (Bi coffee).

Classify green coffee by processing method

Dry processing, wet processing, and honey processing are currently the three most popular methods of coffee processing. (D’codeS has its analysis of these three processing methods.)

Classify green coffee by grain size

Coffee beans go through a lot before they become the delicious beverage we know and love. After being ground, we end up with coffee beans and coffee grain shells. People call these beans “bucket coffee” because they are not classified, so they have different kernels and sizes.

Unroasted coffee will organize green coffee beans into seeds of various lengths depending on the customer’s needs. The 16, 18, 19, and 20 sieves are the best for making high-quality coffee beans.

However, the two most commonly used nuts for making roasted coffee beans are sieve 16 and sieve 18. Coffee beans will use smaller sieve sizes of 14 and 15 of lower quality as mixing materials to reduce the sieve cost. People use coffee sieve size 13 to produce instant coffee.

The coffee bean grading standards are used all over the world, and in Vietnam, they are as follows:

SCA standards:

Vietnam Standard System:

  • National standard TCVN 4193: 2012
  • Vietnam Standard TCVN 4807 – The Ministry of Science, Technology and Environment has released a guide on how to determine grain size by hand sieve.

The general value of green bean coffee in the international market

What a time to be alive for coffee lovers! The trading price of coffee beans on the world commodity market is now higher than ever, and the trading volume of coffee beans is second only to oil. The higher the quality of coffee, the greater the price.

Arabica coffee is highly appreciated and more expensive than Robusta coffee. So if you’re looking to indulge in some of the world’s finest coffee, now is the time to do it!

The Status of manufacturing and export of green coffee bean in Vietnam

Did you know that Vietnam is the second-largest coffee producer in the world? And not just any coffee – we’re talking about robusta, the best of the best. In fact, we produce more Robusta coffee beans than any other country in the world.

On average, we produce 1.2 million tons of coffee each year. But at our peak, we can produce up to 1.5 or 1.7 million tons. And did we mention that 95% of the coffee we produce is robusta?

If you’re ever in Vietnam, be sure to visit one of the five provinces in the Central Highlands where coffee is grown. It’s a truly magical place.

Although Vietnam’s coffee beans are consumed domestically at a rate of 5% to 8%, the majority of the country’s coffee beans (95%) are exported.

In fact, Vietnam exports green coffee beans to most countries in the world. However, the United States and Germany are the two countries that buy Vietnamese coffee beans the most.

In Vietnam, green coffee is meticulously verified for quality and weight by CAFECONTROL.

Our green coffee quality standards adhere to TCVN 4193: 2005, approved by VICOFA and ICO.

4. What is the processing process of green bean coffee?

Stage 1: Harvest fresh green coffee fruit

The best time to harvest fresh berries is when they turn red. In Vietnam, coffee harvesting is usually done manually by spreading a large canvas under a coffee tree and then picking each ripe fruit by hand.

Step 2: Prepare for the green bean coffee’s processing

After being harvested, coffee cherries will be separated from the skin immediately if using the wet processing method. Or, the berries can be sun-dried to reduce the amount of water, and then the skin removed if using the dry processing method.

Step 3: Reduce moisture in green coffee bean

To reduce moisture in the pre-packed coffee bean, the moisture content must be reduced to 12.5%. There are many methods of drying coffee beans, such as sun drying or electric drying.

Sun drying can take a little while, usually around 8 to 10 days. Keep in mind that uneven drying can sometimes occur with this method.

Machine drying is the quickest way to dry your coffee beans, but it’s important to monitor the process carefully to ensure that the beans remain pure.

Step 4: Post-processing: Screen, color shoot, polish and classify the green bean coffee

After the green coffee beans are dried and screened to remove impurities and classify grain sizes, they will be put into more stringent stages of polishing and color shooting, depending on the needs of the buyer.

5. How to preserve green bean coffee to lengthen its shelf-life?

The moisture content of the finished coffee beans is very low, so they can be preserved for a long time without being moldy or losing their natural flavor.

There are two common ways to preserve green coffee: storing it in bags or dumping it.

Method 1: Preserve unroasted coffee in bags/ sacks/ jute bags/ etc.

When using this method, there are a few things you need to keep in mind:

  • Make sure the moisture content of your coffee beans is less than 13% before storing them.
  • Try to store your coffee beans with as few impurities as possible – especially for grade I and II coffee.
  • When it comes to wet storage, be sure to choose an option with good insulation and moisture control. This will help keep your belongings in good condition.
  • Before packing, be sure to disinfect and clean the warehouse.
  • When placing items in storage, be sure to keep them 0.3-0.5 meters off the ground and away from the walls.
  • To keep your bags from getting compacted and crushed, simply reverse the order of the bags every 3 weeks.

Method 2: Preserving unroasted coffee in bulk

Bulk storage is a great way to save on packaging and keep your coffee beans fresh for longer.

The best part about this method is that it not only saves on packaging and increases storage time; but it also saves on warehouse volume by avoiding compaction, which reduces the bulk of the coffee bean.
